When we were still small-scale home brewers and we got the chance to buy dark wheat-malt we couldn’t resist buying a few dozen kilos. After a good beer brainstorming we had an idea to make a beer containing wheat- and pilsner-malt with a liquorice aroma. This idea became a reality and the result was Syrtlingur which gets its name from an island that was formed in the Surtsey eruption 1963-67 but disappeared back into the sea after a few months. The liquorice taste is achieved by using chervil which we pick ourselves in Westman Islands.
